Product Description

After many months of tweaking and testing, we are finally confident in announcing our very own house strain. The Rebel Brewer AMERICAN PUB ALE is a great strain for just about any and all American Ales, making it the perfect house strain. We have tested it on everything from a Rye IPA to a Blonde ale and everything in between, we even brewed a California Common with it. We don't have the official lab numbers from White Labs yet, but in our own testing we have found that the attenuation is consistently around 75%, leaving a really nice body on the beer. It shows mildly fruity ale flavors on beers that don't have alot of ingredient induced flavor. It showed a wide range of Temperature tolerance, as low as 58 degrees for the Cal Common we brewed up to 74 degrees for an American Wheat Ale (fruity ale flavors were more apparent at the higher temperatures). It is a true top cropping strain, you will see alot of healthy happy yeast hanging out on top of the krauzen. Flocculation is just above medium but responds well to cold crashing. We also noticed a flavor accentuation, meaning that it seemed to make hoppy beers a little more hoppy and malty beers a little more malty.

Beer Styles: This strain is great for just about all American ales, making it a perfect "House Yeast"

(Wyeast Substitute: possibly 1450 Denny's)

  1. Impressed!

Took an extra day or two to kick off blubbering in the airlock, but finished out quite nicely in an IPA. Friend pitched his at same time, finished a little sooner than mine, but result was great with his beer as well. I'd use this one for a lot of beers I make.

  2. Best Yeast I've Used

Posted by Jimmy the Geek on 20th Mar 2012

I've been brewing for more than five years now, totally all-grain for the last four. I've used dry yeasts and liquid yeasts, and I can definitely say that liquids perform better than dry most of the time.

That being said, Rebel's American Pub Ale Yeast is by far the best I've used! It has a high alcohol tolerance (last batch fermented to 7.8%) and a great flocculation with a firm sediment.

I decided to try it in the last batch, a clone of Avery Brewing Co's. Old Jubilation Ale, with Nugget hops I grew in my garden. The recipe isn't an exact clone, but I have found a great new recipe!

I will definitely use this yeast again and again.

Used it on a blue moon clone for a friend...yes they use none belgian yeast. It fermented strong and flocculated right out. My friend liked it so much im ordering it again.
